How to Cut a Custom Cake

There have been times when I have delivered sculpted custom cakes, the clients’ only question is, ‘how do I cut it?’. Custom cakes can definitely look complicated to cut, but most of the time they are not! Here is a tutorial based on a round cake below, but tiered cakes and sculpted cakes are based on the exact same principle! 


Start by removing any decorative elements on the top of the cake – pull out any sugar flowers, figurines, or any other decorative items completely before cutting the cake. Be aware of wires, dowels or straws that may be in the cake as support structures as you cut.

Start at the side of the cake and cut straight across. Bring that whole piece down on a cutting board. The piece should be about 1” wide.

Cut the piece into 1.5” wide slices on the cutting board and serve onto plates.

Cut the next piece in one large piece all the way across the cake in the same way. Bring it down onto a cutting board and slice it into 1.5” pieces. Proceed until the whole cake is cut.

Sculpted cakes are usually built in sections, and so you can cut them in sections. Each section is usually separated by a board and structural elements, so just cut until you feel a board under the knife!
